The cooler-climate Adelaide Hills in South Australia is home to Sidewood, a family owned winery, cellar door and restaurant established in 2004. They produce roughly 600,000 bottles annually from 91-hecates of vine.
This 100% single vineyard Cabernet Sauvignon was wild yeast fermented and aged 18 months in French oak.
Notes of green olives and pencil shavings, roasted bell peppers, paprika and salted licorice are underscored by red currents, leather and brown spices. It's a fresh red with a bold savoury demeanor and nice fleshiness. Flavours of wild herbs, wild red berries , toasted spice and espresso round out the palate.
