Juicy, unique, supple.
The cooler-climate Adelaide Hills in South Australia is home to Sidewood, a family owned winery, cellar door and restaurant established in 2004. They produce roughly 600,000 bottles annually from 91-hecates of vine.
This 100% Shiraz was partially whole berry fermented to create a partial carbonic maceration; it went through a malolactic fermentation as well and aged in French oak (about 25% new) for 12 months.
Umeboshi plum aromas are melded with dark chocolate, cherries, baking spices, vanilla, leather, wet cedar and molasses. It has a supple and fresh palate with flavours of plums, dark mocha and cracked pepper. Lovely juiciness here, a unique character.
