Blue Mountain has long been known for their estate grown, traditional method sparkling wines and the value in each bottle--they're widely regarded for making exceptional fizz.
The 2019 (disgorged August 2021 then left in bottle to rest) is a blend of Pinot Noir 65% and Chardonnay 35%; the grapes were whole cluster pressed and each variety fermented separately. After fermentation the components were blended and inoculated with yeast and fermented a second time in bottle. Post secondary fermentation the wine was aged in bottle sur lie for 24 months.
Classic notes of yellow apples and tart red berries, crushed stone and delicate citrusy aromas. It's a delightful fizz, precise and racy with crunchy tree fruit and berry flavours leading to a peach stone finish. Strong mineral undertones here and a long palate cleansing finish.
