Dry, bracing, persistent.
This bone-dry brut zero (meaning it saw zero dosage) is made entirely from Pinot Noir grown in Bissy sous Cruchaud, just 2.5km north of Buxy. It is a traditional method cremant that spent 18 months on lees prior to bottling.
Expect just a stain of pink and flashes of peaches and violets, small red berries, mountain stream and a hint of charred satsuma orange peel. Dry and leesy it has a chalky sort of texture with bracing acidity carved on by a creamy edge. Flavours of red apple skin and salted dried plums trail on a long stony finish.
