Nervy, outstanding, precise.
Township 7 was one of the first BC wineries to make a traditional method sparkling wine in 1999. After some sporadic years Seven Stars was reborn in 2015 under the guidance of winemaker and sparkling wine expert Mary McDermott.
Seven Stars is now its own brand and has five sparkling wines in the portfolio with plans to increase the offering to seven (stands to reason) in coming years; all are Seven Stars Club exclusives.
The 2018 Polaris, a blanc de blanc, is made entirely from Chardonnay (sourced from the Hidden Terrace Vineyard in Oliver and the estate vineyard in Naramata) was left en tirage for 24 months to add complexity.
Yellow with green glints and fine strings of bubbles, it shows notable restraint with notes of white grapefruit, river stones, yellow apples and buttered biscuits. Taut and precise the palate shows focused minerality and high-voltage acidity.
Nervy for the most part, but there is a welcoming creaminess to round out this very complete fizz.
