Township 7 was one of the first BC wineries to make a traditional method sparkling wine in 1999. After some sporadic years Seven Stars was reborn in 2015 under the guidance of winemaker Mary McDermott who took over the role in 2014.
Seven Stars is now its own brand and has five sparkling wines in the portfolio, with plans to increase the offering to seven (stands to reason) in the future. All Seven Stars bubbles are Seven Stars Club exclusives.
Equinox, their premium sparkling rose, is made entirely of Pinot Noir Okanagan Falls, it was left en tirage for 30 months to ensure the development of autolytic characters. After riddling it was disgorged and a small amount of our proprietary dosage was added for complexity and depth of flavour
Expect aromas of small red berries and rhubarb, orange peel and dried violets with cedar chips and bread dough at the core. The palate is full of life, racy and taut with flavours of crushed tangy red berries, peach stone, clay and chipped stone. Persistent and refined.
