Elegant, zesty, classic
Township 7 was one of the first BC wineries to make a traditional method sparkling wine in 1999. After some sporadic years Seven Stars was reborn in 2015 under the guidance of winemaker Mary McDermott who took over the role in 2014.
Seven Stars is now its own brand and has five sparkling wines in the portfolio, with plans to increase the offering to seven (stands to reason) in the future.
All Seven Stars bubbles are Seven Stars Club exclusives with the exception of Polaris and Rigel.
Aurora is a blanc de noir made entirely of Pommard clone 115 Pinot Noir grown in the Okanagan Falls sub-GI form a the Stoneridge Vineyard and it was left en tirage for 30 months.
Expect classic notes of toasted lemon pastries, yellow apples, lemon and wild red berries. It's a fresh and racy wine with creamy mouthfeel and long, elegant and tangy finish. Beautifully balanced and chic.
