A boutique winery located in the famed Coonawarra, in the Limestone Coast Wine Zone of South Australia, Hollick produces wines only from estate-grown fruit. Coonawarra is recognized as one of Australia's finest wine regions and is particularly known for Cabernet Sauvignon, which responds exceptionally well in its red terra rossa soils over limestone. Pure underground water and a long cool ripening season for the grapes produce wines of elegance and longevity.
This wine is made from estate Wrattonbully Shiraz; the vineyard was planted in 1998 and boasts similar shallow terra rossa soils over limestone to Coonawarra, but is marginally warmer resulting in slightly earlier ripening.
Scented with grilled plums and blackberry it also suggests licorice root and tar, charred herbs, toasted peppery spices and dark chocolate. The palate also has a rich chocolaty character along with toasted spice and espresso. A savoury wine with notable acidity and a long oak-laden finish.
