Layered, substantial, balanced.
This Cabernet Sauvignon (56%) with Merlot comes from T7's estate Blue Terrace vineyard on the North Bench in Oliver; it was barrel aged for 24 months in both American and French oak.
The NBO North Bench Oliver suggests aromas of dried cherries and plums, coffee, toasted brown spices, vanilla, tobacco, leather and balsamic. It has a silky entry and grows more concentrated and chewy mid-palate. Flavours of spice, leather and espresso dominate. It's a layered and substantial red that is medium-to-full bodied and shows good balance.
A wine for food. Pair: grilled steaks, mushroom risotto, hearty stews and rustic soups.
Pairs great with Gone Crackers Canadian Chedder & Chive
