Racy, creamy, precise.
Township 7 was one of the first BC wineries to make a traditional method sparkling wine in 1999. After some sporadic years Seven Stars was reborn in 2015 under the guidance of winemaker and sparkling wine expert Mary McDermott.
Seven Stars is now its own brand and has six sparkling wines in the portfolio with plans to increase the offering to seven (stands to reason) in coming years; all are available through the winery.
Polaris, a blanc de blanc, is made entirely from Chardonnay (sourced from the Hidden Terrace Vineyard in Oliver and the estate vineyard in Naramata) and was left en tirage for 21 months to add complexity.
Pale and brilliant with a fine beads of bubbles, the 2020 offers notes of honeysuckle and lemon brioche, apples and starfruit with notable mineral undertones. It is focused and racy with a flinty character and fleshy mid-palate. A classic blanc de blanc with notable precision and a long taut finish.
