The McWatters Collection (along with TIME, Chronos, and Evolve are owned by 5 Vine Cellars) and are made at the TIME Winery in Penticton. A series of new sparkling wines have recently been released, this McWatters Brut is the most serious of the lineup, a traditional method sparkling made from 65% Chardonnay, 25% Pinot Noir and 10% Pinot Blanc left 42 months en tirage. It was also the last wine the late Harry McWatters worked on; those who knew Harry, knew of his love for sparkling wine. When he opened British Columbia's first Estate Winery, Sumac Ridge, in 1980, it became the first winery in the province to make a traditional method sparkling wine, the now iconic Steller's Jay.
Honeysuckle and lemon biscuits, yellow apples, straw and bread dough aromas lead to a dry palate with a creamy mousse. Yellow fruit, a hint of marzipan, and saltines are expressed on the palate along with racy acidity. Lengthy and elegant.
