Structure, concentration, consistency.
Oliver-based Burrowing Owl has maintained a house style and quality consistently over the years and this Cabernet does not differ. Expect cassis, sunbaked earth, peppery spices, dark chocolate and espresso with just enough grilled green peppers at the core to add some freshness. The palate is smooth and fresh with spice, dark fruit and mocha to mimic the nose. Good structure and concentration, it borders on brooding but the sweet fruit on the palate adds levity.
