Made in the method traditionelle, the Seven Stars is a 50/50 blend of Pinot Noir and Chardonnay. It has the intense toastiness one would expect in an older vintage Champagne.
It's a lovely amber hue with aromas of grilled peaches, wild honey, red berries and toast. On the palate its creamy with tart berries, minerals and more earthy-toasty flavours and finishing with citrus zest and peppery spices.
This bubbly wine would pair well with grilled swordfish or roasted quail.
