Covert Farms is a 650-acre, four-generations, family-owned organic farm and winery estate located just north of Oliver.
The Amicitia sparkling Zin (a rare grape to use for bubbly) is made in a natural method (method ancestrale), whereby it is put through natural fermentation, bottled and left to ferment with no intervention. It is unfiltered and topped with a crown cap.
It's a cloudy wine, pretty peachy-blush with rose gold glints and notes of clementines, strawberries, honey and tealeaf. It's lively and honest, crisp and punchy, A good example of this style of wine; it's clean, with a mouthwatering finish
