Fresh, grippy, grapey.
Harvested from Kaleden, the organic Cabernet Sauvignon grapes were destemmed and fermented in clay amphorae and large oak vessels. After 8-months on skins the parts were pressed off and blended before being placed in concrete to settle.
It has a distinct grapeyness on the nose and palate; purple fruits, smoked spice, freshly turned earth and tealeaf aromas lead to a similar bright grapey palate. Bitter cocoa, and toasted spice flavours linger and there are strong skin tannins that grip the palate.
