Easter signifies spring.
It is a new beginning to a fresher and warmer season of sunshine and longer days.
Even those who do not celebrate the religious significance of this holiday, recognize the softer spring hues, the delicate flowers that begin to dot the landscape and that first breath of yellow-green that signifies new life.
Personally, I embrace the idea of Easter brunch - a white tablecloth decorated with pastel spring flowers, waffles, poached eggs and hot-cross buns, but for many, a heartier Easter dinner is the important time to share with friends and family.
