Classic spicy red cherry aromas wrapped in leather, roasted coffee beans, red plum, sunbaked earth, wild herbs and toasted oak. The palate is fresh with appealing rustic charm. Nice balance here, plenty of juicy red fruit with fine toasted spice and tobacco trailing on the finish. Pairs with slow cooked meats or hearty tomato sauces.

Red cherries, floral and dried fruit aromas with leathery barnyard notes. Fresh cherry on the palate with a rustic earthiness and bright acidity, leather, light spices and roasted coffee on the finish. It has good grip and fine, earthy tannins on the finish. Straw coloured with amber glints the Santa Cristina has peach jelly and lemon cream aromas, it's scented with orange blossom, minerals and almond oil notes. Smooth like cognac with parallel aromas. Rich, slightly sherried and nutty with hints of spice and earth. Not too sweet, warm and elegant.
Great with nutty chocolates-dark chocolate covered almonds, milk chocolate peanut clusters, dark chocolate macadamia nuts and cashews.

Col de'Salici Extra Dry DOC Prosecco, Veneto Italy

Extra Dry is slightly sweeter than Brut when you're talking bubbly, and it's generally a pleasing quality in spumante Proseccos - as it is in this one. It is a wonderfully fragrant style, it avails you with white peaches and sweet almond, melon and honey with a hint of rose petals and fresh mint. The bubbles are delicate, it has good tenacity and weight on the tongue with pomelo citrus and almond flavours lingering across the finish. Serve with a platter of taleggio and asiago cheeses, salumi and olives with marinated artichokes and crusty bread.
